I haven't tried this yet but it is high on my list. One of my favorite desserts that can be baked in the air fryer without having to use my big oven. Rather than buying a can of pineapple slices, I think I may use those individual cups of pineapple chunks—one for each cake. Not as pretty but no leftovers. Adding a few pecan halves would be good, too, as well as another cherry or so--easy with the chunks. I’m thinking of using the pineapple juice and/or the milk like my mother did for the original Betty Crocker recipe in the 50’s. And this would lend itself to other fruit--apricots, peaches, apples perhaps? Birdy
Air Fryer Pineapple Upside-Down Cake for Two

This has the delicious taste of pineapple but without all the hassle of turning on your oven.

TOPPING INGREDIENTS:
2 tablespoons unsalted melted butter
2 tablespoons brown sugar
2 large pineapple slices
2 Maraschino Cherries
CAKE INGREDIENTS:
1/3 cup all-purpose flour
1 tablespoon unsalted butter melted
3 tablespoons granulated sugar
1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon pure vanilla extract
1/2 teaspoon ground nutmeg
1/4 cup milk

2 1/2 Servings Cake--using a recipe calculator--if you like a little more cake base. I would go a little light on the nutmeg--it can be strong. I see she linked to 4 oz. ramekins so mine are way too big so I might have to do this--or even more!

20 tsp all-purpose flour = 6 tbsp + 2 tsp
3 3/4 tsp unsalted butter melted
3 3/4 tsp granulated sugar
2/3 teaspoons baking powder
2/3 teaspoon salt
1 1/4 teaspoon pure vanilla extract
2/3 teaspoon ground nutmeg
5 tbsp milk
Start by spraying your ramekins with non-stick cooking spray. And then pour 1 tablespoon of melted butter into the greased ramekin, and then add the brown sugar on top of the butter, add the pineapple slice and top with a cherry in the middle.
In a small bowl, mix the flour, sugar, baking powder, salt, nutmeg, milk, vanilla, and melted butter. Mix well.
Then pour half the batter into the ramekin.
Set into the air fryer and air fry for 10-12 minutes at 320 degrees F, or until a toothpick comes out clean when inserted into the middle of the cake.
Plate, serve, and enjoy!
