Quick Chicken and Asparagus Spaghetti-cooktocook Serves 4
Ingredients: 8 oz. dry spaghetti 1 bunch of fresh asparagus, woody stems removed 1 can, (10 3/4 oz.) Cream of Asparagus soup or Cream of Chicken (I used Chicken) 1 can, (14.5 oz.) diced tomatoes, drained (I used diced with garlic, basil, and oregano, no salt) 1/2 cup milk 2 tsp. Italian seasoning (I used 1 tsp. since my tomatoes were seasoned) 1 pkg. (9 oz.) Tyson chicken breast strips (There is a recall on Tyson chicken items, which I never buy--used two chicken breasts that I cut into strips and cooked ahead of time in a bit of butter) Parmesan cheese, if desired to sprinkle on top
Directions: 1--Cook spaghetti according to pkg. directions, adding the asparagus the last 4 minutes of cooking; drain. 2--In a large skillet cook and stir soup, tomatoes, milk, and Italian seasoning over medium heat until bubbly. Stir in cooked chicken, and spaghetti and asparagus. 3--Cover and simmer about 10 minutes or until heated through. Sprinkle each serving with Parmesan cheese , if desired. (I did not simmer but a minute or two--everything was hot).
Made this for dinner tonight and both DH and I enjoyed it--looking forward to heating up the leftovers in a few days. Pasta with a creamy sauce, moist chunks of chicken, and a touch of tomato--yum!-------Lori
Notes:The noodles soaked up some of the sauce and DH likes his pasta wet, so I went ahead and doubled the soup, tomatoes, and milk.
