Creamy Broccoli and Wild Rice Soup Servings: 6 (1-cup)-cooktocook
Ingredients:
1 package (10 oz.) frozen broccoli in cheese-flavored sauce 1 (10 oz.) package long grain white and wild rice in a pouch 2 Tbsp. butter or oleo 1/2 cup chopped onion 1/2 cup chopped celery 1/2 cup sliced almonds 1/4 pound cubed smoked ham 1/2 tsp. dried thyme leaves 1/2 tsp. dried marjoram 1/4 tsp. salt 1/8th tsp. pepper 3 cups half-and-half Paprika
Directions: 1--Cook broccoli and rice according to package directions: set aside. 2--Meanwhile, melt butter in large saucepan over medium-high heat. 3--Add onion, celery,and almonds; cook and stir until vegetables are tender and almonds are slightly browned. 4--Stir in broccoli in cheese sauce, rice, ham, thyme, marjoram, salt, and pepper; mix well. 5--Stir in half-and-half. Cook until thoroughly heated--do not boil. 6--Ladle soup into bowls; sprinkle with paprika.
Notes: A substitution for marjoram is oregano; not very cheesy, so add a very small piece of cheddar while warming on stove top; forgot to sprinkle on paprika. Rice came in a 8.8oz pouch: I bought two, but only used the one pouch which was plenty.
