Low carb pb cheesecakes-mnwildflowers 1/2 cup whipping cream 4 oz softened cream cheese 1&1/2 T sugar free vanilla pudding mix 2 rounded T peanut butter (we use natural no sugar added pb) 3-4 Tbs plain greek yogurt (could use vanilla but again, no sugar this way) 3-4 Tbs plain almond milk (regular milk would work but we use almond for low carb)
Whip the cream until stiff and set aside. In another bowl beat remaining ingredients until smooth and fairly thick,(comes out much thicker than pudding, when you scoop it it should hold its shape). Fold in half of the whipped cream until fully blended. Fold in remaining whipped cream. Should be light and fluffy but still pretty stiff. I use an ice cream scoop with the little flicker to scoop in to aluminum muffin liners. I get 8 out of this recipe. Chill and store in the fridge. These contain 2.5g net carbs each and 0.75 g sugar.
