Mock Lobster-annrms 1 pound package frozen haddock fillets or other flaky white fish 3 cups water 3 teaspoons seafood bouillon (Used Better Than brand, lobster) 1 cup celery, small dice (Use tender center pieces with leaves.) ¼ cup onion, small dice 3 tablespoons roasted peppers, small dice Salt and pepper, to taste Fresh lemon juice, to taste Mayonnaise – just enough to hold mixture together. 1 teaspoon sweet paprika Butter lettuce NE split top rolls, buttered and toasted on both sides Cut semi-thawed fish into large chunks. Put water and bouillon in skillet with cover. Bring to a boil, add fish, bring back to a simmer, cover, turn off the burner and let fish sit in poaching liquid until instant read thermometer registers 140°. Remove from liquid. (Save liquid for chowder or use again for poaching. Freeze it.) Break fish into small chunks; gently mix in celery, onion, and roasted peppers. Sprinkle with paprika. Mix in mayonnaise. Season with lemon juice, salt and pepper. Grill rolls, place a lettuce leaf in each and top it with fish mixture. Enjoy with chips!
