Ingredients1 box chicken flavor Rice-A-Roni
1 (10.5-oz) can cream of chicken soup
½ cup sour cream
1 cup cottage cheese
4 -oz cream cheese, room temperature
½ tsp onion powder
¼ tsp garlic powder
4 cups cooked chopped chicken
¼ cup grated parmesan cheese
1 (3-oz) can French fried onions
Directions
Preheat oven to 350º F. Spray a 9×13-inch baking dish with cooking spray.
Prepare Rice-A-Roni according to package directions. Add soup, sour cream, cottage cheese, cream cheese, onion powder, garlic powder, and chicken. Stir to combine.
Spread rice mixture into prepared pan. Top rice with parmesan cheese and fried onions.
Bake uncovered for 30 minutes.
You want the cream cheese to be very soft so it gets fully incorporated into the rice mixture. Microwave the cream cheese for 15 to 20 seconds if you are short on time.
Feel free to add some chopped broccoli to the casserole mixture.

I used rotisserie chicken for the cooked chicken in this casserole.
