Spicy Farro Salad with Edamame and Carrots (Vegan)-cooktocook Prep time:5 minutes Cook time:30 minutes
Ingredients: 1 cup pearled farro 1 cup shelled edamame 1 cup matchstick carrots 1 tsp. crushed red pepper flakes (more or less depending on how spicy you want it. I didn't use much at all since DH doesn't like spicy-maybe 1/4 tsp.) 1 tsp. fresh basil, chopped salt and pepper to taste 1 tsp. extra virgin olive oil Instructions: 1-Cook farro according to package directions until slightly chewy and no longer hard. (Mine took 30 minutes, but different brands can vary in cooking times). 2-Last 5 minutes of cooking, add the edamame and carrots. 3-Stir in red pepper flakes, basil, salt, and pepper. 4-Drizzle with olive oil. 5-Serve warm or cold. (I chilled ours for a few hours). Can be stored in an airtight container in the refrigerator for up to 5 days. Note: I found it just a tad dry so I stirred in a little Good Seasons Italian salad dressing.
