Summer Party Salad-cooktocook Serves:12 Chill Time:1 Hour
Ingredients: 1/3 cup extra virgin olive oil 4 Tbsp. lime juice 3 cloves garlic, minced 2 Tbsp. finely chopped cilantro (I used 1 Tbsp. dried) 1/4 tsp. salt (I ended up adding more at the end) 1/2 tsp. black pepper 1 (15oz.) can of chick peas, rinsed and drained 1 (15oz.) can black beans, rinsed and drained 1 1/2 cups cherry or grape tomatoes, cut into quarters (will cut down to 1 cup next time) 1 cup frozen corn, thawed (could use fresh) 1 cup chopped cucumber 1/2 cup thinly sliced scallion Directions: 1--In a medium bowl, whisk olive oil, lime juice, garlic, cilantro, salt, and pepper; set aside. 2--In a large bowl, combine the remaining ingredients. Pour dressing over salad and toss until evenly coated. 3--Refrigerate 1 hour or until ready to serve.
