Rocky Road No-Bake Cheesecake-cooktocook
Whipped this up today. A cheesecake version of a favorite ice cream flavor. Refreshing on a hot day. Lori
Prep:15 minutes, Total:4 hours and 15 minutes (include refrigerating), Serves:10
Ingredients:
3 squares of Baker's Semi-Sweet Baking Chocolate, divided (each 1oz. square consist of 4-pieces of chocolate)
2 pkgs. cream cheese, 8 oz. each
1/3 cup sugar
1/4 cup milk
2 cups thawed whipped topping
3/4 cup mini-marshmallows
1/3 cup chopped peanuts
1 Oreo 6oz. pie crust
Directions:
1--Microwave 1 oz. of the chocolate in a small microwave bowl for 1 minute until melted; set aside to cool.
2--Beat cream cheese, sugar, and milk with electric mixer on medium until well blended. Add melted chocolate and mix well. Gently stir in whipped topping, marshmallow, and peanuts. Coarsely chop remaining 2 chocolate squares and stir into the cream cheese mixture. Spoon into crust.
3--Refrigerate 4 hours until set.
Notes:
1--Store was out of Oreo Crust--went with chocolate
2--Used light cream cheese
