Spaghetti Squash Casserole-cooktocook Bake: 400*F, 35-40 minutes Serves:6
Ingredients: 1 spaghetti squash 1/2 cup sour cream 1 egg, slightly beaten 1 Tbsp. minced garlic (I didn't measure-we like garlic, so I used 3 cloves) 1/4 tsp. dried Italian seasoning 1/4 tsp. dried thyme 1/2 tsp. salt 1/4 tsp. black pepper 1/4 cup shredded cheddar cheese Directions:
1--Cook spaghetti squash your favorite way. When tender, let it cool. Use a fork to scrape out strands. 2--In a large bowl, combine 3 cups of squash and the remaining ingredients. Mix well. Place mixture in a greased baking dish. 3--Bake 35-40 minutes or until browned on top and heated through.
Notes: Enjoyed it made as above, but next time I will experiment a bit--cut back to 2 cloves of garlic, add a bit of finely diced onion, and increase the cheese to 3/4-1 cup.
