Johnny Cake for 2-wilderness
Ingredients
1/2 C Sour Milk
1 T shortening
1 C flour
1/2 salt
1/2 C sugar
1/2 egg (1 1/2 T)
1/2 tsp baking soda
Directions
Stir ingredients together and add corn meal until thickness of layer cake. About 1 Cup.
Best baked in a cast iron skillet.
The entire recipe makes a 7 1/2" skillet a 5"X7" cake pan, 10 muffins Baking time will vary. Start checking at 10 minutes. The 5"x7" will be a bit thicker.
To make it for 1 use a 5.5" skillet this will make 3.
If you are freezing the dough don't add baking soda until thawed and ready to bake. I use 1/2 tsp of baking soda which is a little more than the recipe calls for in the 1/3 batter. If it is real thick add milk to the right consistency.
Heat skilled in oven with shortening until hot then add batter.
Bake a 375°
I don't think I will put this in the cookbook. It is way too confusing.
