Two-Ingredient Soda Cake for 2-Birdy
The other day I saw where you can take a 15 ounce box of any flavor cake mix and the only thing you have to add to it is a 12 ounce can of any flavor of regular or diet soft drink or sparkling water to it and bake according to the package directions. So I decided to make a little 4” cake using the soda and it turned out great. I’ve included a chart that shows some of the cake mix/soft drink flavors that you might want to try. * 6 tablespoons cake mix, any flavor * 2 tablespoons soft drink, regular or diet or sparkling soda In a small bowl, stir together the cake mix and soft drink with a spoon until all the dry mix is combined. Pour into a small greased ramekin or other baking dish. Bake at 350° for 9 to 15 minutes. Bake time will depend on the size of your pan. I baked mine in a 4” cake pan in a preheated toaster oven for 14 minutes, until a toothpick inserted in the center comes out clean. If you want a 6x6 or 7x5 cake, use 1 cup plus 1 tablespoon cake mix and 4 ounces of soft drink. Mix with electric mixer on medium speed for 1 minute. Bake for 20-30 minutes or until toothpick comes out clean.
