Butter-Roasted Chicken-cooktocook Serves:5
Served this for dinner this evening. Flavorful and moist as can be and on top of that, easy to prepare! I did cut the ingredients in half. DH declared it a keeper. Lori
Ingredients: 10 bone-in chicken thighs 1 cup water 1/2 cup lemon juice 2 Tbsp. butter, sliced 2 Tbsp. paprika 2 tsp. brown sugar, packed 2 tsp. salt 1 tsp. pepper 1 tsp. dried rosemary 1 tsp. chicken bouillon granules 1/4 tsp. cayenne pepper 1/4 tsp. nutmeg Directions: 1--Arrange chicken in an ungreased 13"X9"baking pan; set aside. 2--Combine remaining ingredients in a small saucepan. Bring to a boil over medium-high heat; boil for 2 minutes. 3--Spoon mixture over chicken. Cover with aluminum foil; bake at 325*F for one hour. 4--Uncover; baste chicken with the pan drippings. Increase oven temperature to 450*. Bake uncovered, an additional 20 minutes or until chicken is crispand golden.
Notes: *I used skinless chicken thighs so although the chicken was flavorful right down to the bone, it never got super crispy.
