Just Enough Cake

TWO WAYS TO MAKE CAKE:
A. Get into it, most of the ingredients are common enough so you may have them around to make a cake from scratch. Once you can make a cake from scratch you can tackle almost anything else.
B. Spend a buck and a half and buy a cake in a box. ($1.00 if you buy it on sale)
Do the math: those tiny frosted 6" cakes from the bakery are usually $3.99 to $5.99. A box cake is a $1.50 and you are only gonna want 1/3rd of it, the frosting is another $1.75 but you aren't going to use it all up on one itty bitty cake...no you are gonna stick the remainder of that in the fridge and eat it slowly spoon by spoon.
So, for $3.25 you can make three 6" cakes or 18 cupcakes, less if you want to scratch bake. Some folks including me, find box cakes too sweet, but then if you are hankering for a taste of cake, you may be looking for sweet. Either way it's about a buck a cake.
MAKE THE CAKE:
For this recipe use something like these:
6"x 2" cake pan
6 muffin pan
8" x 8" baking pan
Grease the pan with cooking spray that contains flour or use 1 tablespoon flour with cooking spray or grease.
Preheat oven to 350ยบ
BOX CAKE
A box cake usually has 3 cups of mix inside, and calls for 3 eggs. So the math is pretty easy. (Note: You might not get 3 full cups from a mix anymore. This is old--2009.)
1 cup cake mix
1 egg
6 tablespoons and 2 teaspoons of water
1 tablespoon and 2 teaspoons of oil
Mix ingredients in medium bowl.
Beat with a whisk or mixed 1 minute until all the lumps are gone and it looks smooth.
Pour batter into the prepared pan.
Bake 20 minutes or until inserted tooth pick comes out clean.
When using a portion of a box of something, cut the directions off the box and save them with the rest of the product. Convenient for saving calculations.
SCRATCH CAKE
1 cup all-purpose flour
3/4 cup white sugar
1/4 cup shortening (or soft butter)
1/2 cup milk
1-3/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 whole egg and 1 egg yolk
In a large bowl, cream sugar and shortening until light and fluffy.
Add flour, baking powder and salt, milk and vanilla.
Beat with a whisk or mixed 1 minute until all the lumps are gone and it looks smooth.
Pour batter into the prepared pan.
bake 25 minutes or until inserted tooth pick comes out clean frost it:
Let it get completely cool before frosting, otherwise it just gets slimy. Granted it's hard to beat frosting in a can, but you can frost your cake with a lot of things. Powdered sugar, chocolate sauce, peanut butter, blackberry jam or marmalade also make nice fillings. For the one pictured, I used Nutella as a filling, and blended Nutella with a buttercream frosting from a can to frost the outside. The cupcakes i just used buttercream.
Jiffy brand also makes powdered frosting in a box IF you can find it. They also make half size cake mixes in a box and are quite scarce in my neighborhood.
