Good morning friends. According to what I saw on the news this morning, today is Nat'l Fajita Day and also Nat'l Ice Cream Pie Day. If you could have one or the other, which one would you pick, a fajita or a slice of ice cream pie? When I was growing up, I always requested an ice cream pie for my birthday. It drove my younger brothers mad because they wanted cake AND ice cream, not just the ice cream. LOL. Guess you know what I'd pick!
Also on the news this morning, it was mentioned that Wal Mart is now carrying deep-fried Twinkies. Would you be up to giving them a try? Deep-fried Twinkies, as well as many other deep-fried products are very popular at the Florida State Fair, but sorry, they just don't appeal to me. In fact, I haven't had a regular Twinkie since my high school days which is way over40 years ago.
So what's on the menu at your house today? I'm thinking of several possibilities at this early hour--when I make a final decision, I'll be back to share with you.

Good morning Lori. Is cream pie over fajitas any day!!! And a definite 'no' to deep fried twinkies. Not sure that I've ever had a twinkie - didn't grow up on this side of the pond. Tonight it will just be me at home for supper - hubby's evening golf league is tonight and he will eat with his buddies. When I took chicken from the freezer yesterday I had one piece left so I will use that, somehow, for myself this evening.
We had a friend come by to eat with us yesterday and I made Alice Springs Chicken. OMG - I've had the recipe for years in that pile of recipes we all seem to have that are 'must tries' - it was fabulous. And easy. And I had all the ingredients I needed! Will be making it again for sure. Impressive enough for company - speedy enough for a quick meal for 2!

Tasty, when you have time , I'd really appreciate that recipe for Alice Springs Chicken. The gal I just had lunch with the other day, my former teacher aide, loves that chicken and always orders it when she goes to the Outback. I'd like to make it and surprise her with a lunch in the future. Thanks. Lori

Good morning. Got a little chuckle about today being Nat'l fajita day. Last night I took a piece of chicken out of the freezer to make Chicken Fajitas for dinner tonight. Gee am I getting physic? LOL
I go need to go get everything cut up and in to marinate before time to leave for work. Also interested in that chicken you mentioned Tasty.

Good morning- Well it sounds like it will be a warm one today too. They say 93*. Chuck and wife went to the state fair today to watch the DGD show her rabbit. He said he would be coming home early! Its good they went DGC are very important.
Just doing some house cleaning as it needs vacuuming and dusting. I sit and rest several times with this foot. Such is life.
Guess there is not much news here today. Will be on the mower this afternoon. I think with all the rain and more to come Friday that is where I will be!

Good Morning ! This is a travel day for us so no cooking going on. We will stop for lunch somewhere, then we have a collection of leftovers to use up. The new recipe I tried last night was very good! It was called Three Cheers for Chicken and it was basically some seasoned chicken breasts in a dish, mix sautéed onions, a couple cans of soups, water, pimentos and rice (I left out the green pepper) -pour it over the chicken, cover, bake and top with some cheese right before the end of cooking. I accidentally picked up a can of chicken and rice soup rather than cream of chicken, but that turned out just fine.
Lori, I would choose ice cream over fajitas. I like fajita meat, but have never been fond of flour tortillas, so I seldom ever order fajitas at a restaurant.
Don't believe I have ever had a deep fried twinkie. It doesn't really appeal to me either. DH likes twinkies, but I prefer something chocolate like ding dongs, or maybe a raspberry zinger. Both of us carry extra weight nowadays so I try to avoid ever buying that sort of thing at the store.
It is a little cloudy here so far, but the sun is trying hard to come out.
Better get a move. I still need to get myself ready and then do the chores to get the RV packed up and ready to roll. I'll check back in later!

Good morning all. I am in my favorite Deli town today. Looking forward to what ever Lisia's has. (Pronounced Lee-sigh's) That is about my most favorite deli. Always has comfort food along with great deli sandwiches. Great fries too! Although I do not need all that like Tamara I too am carrying a bit too much weight. I did lose 56 pounds a couple years ago and have been able not to put it back on. I could stand to lose about 30 more!(probably won't as long as I do the HC's) LOL We are having tacos or taco salad tonight. Depends on how I feel when I get home. I would take the ice cream pie over the fajitas! As long as it was chocolate! I have not tried deep fried twinkies but I never cared for them as a kid. I am with you on the ding dongs or my fav was a funny bone! Chris (had one HC and now a frozen one! ) Wondering "can you deep fry HC"s hummmmm?

Here you go: Alice Springs Chicken
1 cup Dijon mustard 1 cup honey
1 tablespoon canola oil 1 teaspoon lemon juice
4 -6 b’less s’less chicken breasts 1 tablespoon vegetable oil
2 cups sliced mushrooms 2 tablespoons butter
1/2 teaspoon salt 1/2 teaspoon pepper
1/2 teaspoon paprika 12 slices bacon, cooked - I only used 4 slices 3 cups shredded Mexican blend cheese
2 teaspoons chopped fresh parsley
With an electric mixer combine the mustard, honey, and 1 Tbsp oil, and lemon juice for 1 minute. Pour 1/2 mixture over chicken in a gallon ziplock to marinate in fridge 2-24 hours. Chill remaining marinade to serve with chicken. After marinating chicken, preheat oven to 375°F Put remaining oil in frying pan. Heat and sear chicken on both sides. Transfer chicken to oven safe pan and brush with marinade. Meanwhile in frying pan add butter and saute mushrooms. Season chicken breasts with salt and peppers. Stack bacon across each breast, spoon mushrooms on each breast and then approx 1/3- 1/2 cup cheese on each. Cover pan with foil and bake 7-10 minutes or until cheese is melted and bubbly. Sprinkle with parsley and serve with honey mustard marinade.

Good morning.
It is a cloudy start to our day here. Hopefully, that will keep it cooler. We have many fires around the area. Last night a fire started a few towns over near a large housing development. It was contained and they did not lose any structures. Very unsettling.
I think I will make pasta tonight. It got bumped from the menu 2 nights ago as I was too busy that night to cook so I picked up subs.
Lori, ice cream cake for me. I love ice cream. I enjoy those little single serving types to keep my serving in check. Funny thing is I don't much in the winter even though I live in a warm climate. I think it is my New England roots to blame.

Ann, forgot to tell you earlier today that DH and I enjoyed the foil-pack chicken enchiladas. The recipe is a Kraft recipe. Made it as written, but had to bake in the oven due to heavy rains that moved in around 4:30 yesterday. Would make it again, but would use larger tortillas that I did.
Stepped out on the lanai to check my container plants and was excited to see that one of three mango seeds I planted a week ago has sprouted. Love mangos and since this was my first attempt to grown them, will need to research what I do next.
Decided I am going to make my veggie pita sandwiches this evening for dinner since temperatures will be soaring back up into the mid-90's. Just slice a pita and stuff with some sliced veggies--cauliflower, broccoli, carrots, mushrooms, peppers, and cukes. Top with your favorite dressing and sunflower seeds. Cool, crunchy, and a super easy warm weather meal!

Good Thursday morning to one and all. It is going to be HOT today so I will not be cooking.I'm also going to have a pita pocket with veggies and a touch of italian dressing on the veggies, watermelon for dessert. My daughter wants to take me grocery shopping tonight but think I will wait until it is not so hot. I just can not take the heat and humidity anymore, makes it to hard for me to breathe. I don't have any plans for today except to wait for my meds to be delivered-- exciting life I lead. I hope everyone will have a good day.
