POT PIES Makes 2
About 8 ounces of cooked meat (chicken, turkey, beef etc..) 1 carrot, 1 celery stalk, 1 small onion OR 8 ounces of drained mixed veggies OR 8 ounces previously frozen ones. 1 cup leftover gravy OR 1 cup made from gravy mix ½ c buttermilk biscuit mix (mixed with with 2-3 tablespoons milk to form soft dough) OR 1 premade pie crust 1 tablespoon of butter Cooking spray TOOLS 2 small deep casseroles (about 15-20 ounces)
Preheat oven to 350º Cut meat into bite sized chunks. Dice onion, celery, and carrot and saute in butter until soft, about 5-7 minutes Add gravy and meat to vegetables. Heat through. Fill greased casseroles ½ to ¾ full. Top with biscuit dough in small round lumps, or top with pie crust cut to the same diameter as the casserole. Bake 35 minutes until crusts are just browned.
