Toad in the Hole with Onion Gravy for Two-Birdy

Serves 2
4 good sausages. My preference Porky White's Surrey pork sausages. (or your favorites if you can’t travel to the UK for yours)
1/4 pint semi skimmed milk (A UK pint is qual to 1.2 pt. US or 2.4 cups. So 1/4 of this would be 1/2 cup + 1 tbsp. + 1 tsp)
2 eggs
2 oz plain (AP) flour
Olive oil
Pre cook veg. for the sides. I do new potatoes, carrots and peas. Place in pyrex bowl, cover with cling film, and bung in the microwave oven to wait!
STEP 2
Pour 1/4 pint of milk into a jug. Add two eggs and whisk. Put 2 oz of plain flour in a bowl, add the whisked eggs and milk, and whisk well for a couple of minutes. Pour back into the jug and place on one side.
STEP 3
Heat oven to 200/180 fan. (392F/356F convection--round to 400F/350F conv.) Cover base of 23cm (9 in.) square baking tray with drizzle of olive oil. Put in oven - middle shelf to heat.
STEP 4
When up to temperature slide out tray, put sausages in, and toss them about. Then into oven - but only for a couple of minutes.
STEP 5
Now give the mix in the jug a final whisk. Slide out baking tray, position sausages to keep them separate, then gently pour in the batter mix. Return to oven for 20 to 25 minutes. Keep an eye on them, and when ready give the veg a blast in the microwave, and make some gravy.
Onion Gravy

1 onion, finely sliced
1 tbsp vegetable oil
2 tsp plain (AP) flour
2 tsp English mustard
2 tsp Worcestershire sauce
1 vegetable stock cube, made up to 300ml (1 1/4 cup)
To make the gravy, heat a deep frying pan or saucepan and fry the remaining onion in the oil for 5 mins until golden. Sprinkle over the flour and cook, stirring until thickened. Add the mustard, Worcestershire sauce and, gradually, the stock, stirring until smooth and thickened to your liking.
Serve the toad in the hole with the gravy to pour over.

TIP: You can easily adapt the sausages in this recipe to suit your family needs; try flavoured pork sausages, lower fat alternatives or vegetarian sausages as you like
Note: This is a recipe from the BBC. You may have to do the seasoning to taste on the onion gravy, but I think this is the gravy of choice for Toad-in-the-Hole. Birdy
