Creamy Turkey & Stuffing Casserole-cooktocook
Made this for dinner yesterday and it has to be the best casserole I've ever made to use up leftover turkey! Veggies, a creamy gravy, and stuffing on top--what's not to like! Even before DH went for a second helping, he declared it a keeper. Enjoy--Lori
Cook Time: 30-45 minutes
Ingredients:
Gravy/Sauce:
1/2 cup AP flour
6 Tbsp. butter
1/2 cup onion, diced
2 garlic cloves, minced
2/3 cup milk or cream
2 cups chicken broth
1/2 tsp. salt
1/4 tsp. black pepper
Filling:
1/2 cup sour cream
3 cups turkey, diced or shredded
1- 1/2 cups frozen mixed vegetables, thawed
3-4 cups stuffing, cooked
Fresh parsley, minced (optional)
Instructions:
1--Grease a 13X9-inch rectangular baking dish with nonstick cooking spray. Set aside.
2--In a large saucepan, melt butter over medium-low heat. Add onion and cook for 2-3 minutes or until softened. Stir in garlic for 30 seconds then whisk in flour, salt and pepper. Cook, stirring frequently until golden, 2-3 minutes. Pour in milk and broth; bring to a simmer, stirring until thickened.
3--Remove from heat and set aside. taste and adjust seasonings, as desired. Stir in sour cream, diced turkey and vegetables.
4--Pour mixture into the prepared baking dish. Top evenly with small spoonful's of leftover stuffing, breaking it up with your fingers if necessary.
5--Bake at 375* degrees for 30-35 minutes or until bubbly and golden. Allow several minutes to set and cool. Garnish with parsley if you want.
Notes:
*I did not have leftover stuffing, so I made up one box of Stove Top, low sodium per directions. I let it cool down a bit and then crumbled it over the mixture before baking.
