McDonalds french fries-wilderness
3 lbs potatoes peeled and cut into 1/4" fries
Cut and place in 8 c of water with 2 T of white vinegar. Drain and rinse when finished cutting and soak in another 8 c of water and 2 T of vinegar over night. Drain and rinse and toss in simple syrup made with 4 c water and 1/2 c sugar. Drain again and then pour 4 c water with 2 T of vinegar and juice of one lemon. Mix good in this mixture then drain and fry at 390 degrees for 1 minute and drain on wire rack or towels. When cool enough to handle place in single layer on sheet tray and freeze for at least 4 hours. This is where I then bag them until I want to use them. To use fry at 275 for 5 minutes and drain. Increase heat to 375 and fry for another 5 minutes until or until golden brown and crisp.
