Karen’s Pineapple Pepper Jelly-pippin
3/4c apple cider vinegar 2 1/4 c pineapple juice 5c sugar 1 tsp red pepper flakes (or more to taste) 1 six oz bottle liquid pectin
Bring all but pectin to full boil in a heavy saucepan stirring constantly….add pectin all at once. Bring to boil again and boil 1 minute.Ladle into hot sterile jars and seal.
Yield: 6 8oz jars.
