Boar's Head Classic Chicken Enchiladas-cooktocook Makes 5 servings
Ingredients: 3 thick 1/2-inch slices of Boar's Head Oven roasted Chicken Breast, cut into 1/2-inch cubes, approx. 1 1/4 lbs.** 1 lb. chunk Boar's Head Monterey jack Cheese with Jalapeno, shredded** 1 cup sour cream 1/4 tsp. salt 1 tsp. chili powder 1/8 tsp. ground red pepper 10 6-inch flour tortillas 1 1/2 cups enchilada sauce 1/2 cup sliced black olives 1/4 cup minced green onions
Directions: 1--Combine chicken breast, 2 cups od cheese, sour cream and seasonings; mix well. 2--Spread 1/4 cup of this mixture on each tortilla; roll up tightly. 3--Pour 1/2 cup of enchilada sauce on bottom of 12"X8" baking dish. Place tortillas in baking dish, seam side down; top with remaining enchilada sauce and cheese. 4--Bake at 350* for 20 minutes or until thoroughly heated. 5--Top with olives and green onion. **Notes** I do not use the Boar's Head products and instead use my own roasted chicken and just a store brand of Monterey Jack with Jalapeno cheese.
