Jim’s Barnyard Chili Jim Reed-Tamaralynn 1 ½ lbs stew meat
1 ½ lbs lean pork stew meat
1 med. Onion, diced
2 heaping t. garlic, minced
2-3 t. oil
14.5 oz beef broth
20 oz Rotel tomatoes
32 oz chili beans
1 envelope brown gravy mix
1 envelope pork gravy mix
¼ t. paprika
¼ t. cumin
4 t. chili powder
1-2 t. red pepper flakes-optional
In large Dutch oven, heat oil. Add meats, onion and garlic. Cook until nearly done. Add remaining. Bring to a boil. Reduce heat, simmer 3-4 hours. Season to taste with salt and pepper. Can made 1 day ahead, chill overnight to let flavors meld.
