Spicy Bean & Beef Pie-annrms Makes 2 Freezes well Filling 1 pound ground meat, cooked, drained, and placed in a large bowl 3 cloves garlic, minced 1 can (11 ½ oz.) condensed bean with bacon soup, undiluted 1 (16 oz.) jar Picante sauce, divided ¼ cup cornstarch 3 Tablespoons fresh parsley, minced 1 bunch green onion, trimmed & sliced thin 1 heaping teaspoon chili powder 1 heaping teaspoon cumin 1 teaspoon smoked paprika Freshly ground pepper to taste 1 (16 oz.) each black beans & dark red kidney beans (Goya brand), rinsed and drained 2 cups 4-cheese blend 1 package Pillsbury crusts Line 2 (9-inch) pie plates with the dough according to the directions. In a bowl with the hamburger, combine the garlic, soup, ½ of the Picante sauce, cornstarch, parsley, cumin, chili powder, paprika, & pepper. Mix well. Fold in beans, cheese, and green onion. Fill each pastry shell with some bean mixture. Pat down to level it out. Bake them in a preheated 425° oven or 30 – 35 minutes or until lightly browned. Let stand for 5 minutes before serving. Serve each slice with a dollop of sauce. Sauce Combine: Remaining Picante sauce 1 cup sour cream 3 teaspoons dried chives 2 T. minced fresh parsley ¼ cup red onion, fine dice 1 bunch scallions, trimmed and thin sliced ¾ teaspoon cumin 1 tablespoon grated lime peel Juice of ½ lime You can also make this without the crust and serve it “chili style” with sauce and some “Scoops”. Omit the cornstarch if you want to do it this way so it will be more scoopable.
