Orzo Salad with Zucchini and Feta-cooktocook Serves:8
A light summer side dish. A keeper in our house.--Lori
Ingredients: 8 oz. orzo 3 Tbsp. olive oil 3 Tbsp. white wine vinegar 1/2 tsp. crushed red pepper 3/4 tsp. salt 1/4 tsp. pepper 8 oz. feta, crumbled (I used a 4oz. pkg. and thought it was enough) 1 1/4 lbs. small zucchini, cut into thin half-moons (3-4 zucchinis were suggested, but I found 2 to be plenty) 1/4 cup chopped fresh dill (I only had dried so I used a pinch of it)
Directions: 1--Cook orzo in boiling water until al dente, approx. 10 minutes. Drain and run under cold water to cool. 2--In a large bowl combine oil, vinegar, red pepper, salt and pepper. Add zucchini and let marinate, tossing occasionally for 20 minutes. 3--Pour marinated zucchini and dressing over orzo mixture; stir. Sprinkle with dill and stir once again.
