Tuscan One Pot (From Salem, NH. Senior Center Cookbook)annrms 1 T olive oil 1 lb. Turkey sausage, casing removed (Used kielbasa) 1 small onion, chopped 2 cloves garlic, minced 2 (15 ½ oz.)can Great Northern beans, undrained[3 cans if you want a thicker soup] 2 c. chicken broth (add water to make 2 cups from standard can) [Used full quart.] 1 can diced spicy tomatoes, undrained (my addition) 1 tsp. Italian seasoning pepper to taste 2 cups spinach or kale, washed, patted dry and chopped (use 1 bag frozen, chopped) In a large pot, heat oil over high heat. Add sausage, onion and garlic and cook 6-8 minutes or until no longer pink, stirring frequently to break up the meat. Add remaining ingredients except spinach or kale; bring to a boil. Reduce heat to low and simmer, uncovered for 30 minutes, or until thickened. Stir in spinach or kale, simmer a few more minutes until wilted. Serve.
