This is a single serving recipe but could easily be increased. I sometimes forget how handy the microwave can be for saving time when making something that calls for a cooked ingredient--and faster! Birdy

MINI POTATO CASSEROLE
Last week, I shared a quick way to fix fried potatoes by pre-cooking them first in the microwave. Today I decided to use the same method to make this potato casserole. This tastes similar to a twice baked potato. The amounts for the butter, sour cream and cheese can be adjusted to your taste so just stir everything together and take a taste before baking in the oven. To be honest, I sampled mine before I spread it in the dish and it was so good, I almost ate it without baking it so baking in the oven isn’t mandatory lol.
For the potato, I cut it in large chunks, placed in a small microwave-safe glass dish, added about 1/4 cup water, covered with a glass lid and cooked in the microwave for 5-6 minutes until very tender, then drained the water. You could also boil it in a saucepan on the stove top.
Serves 1
1 medium cooked potato
1/4 cup shredded cheddar cheese plus 1-2 tablespoons for topping
1 tablespoon milk or cream
1/4 cup sour cream
2 tablespoons butter, melted
Salt and pepper to taste
Pinch of onion powder and/or garlic powder, optional
1 slice bacon, cooked crisp and crumbled
1-2 tablespoons chopped green onion for garnish, optional
In a small bowl, mash up the cooked potato with a fork. Stir in the 1/4 cup of cheese, milk, sour cream, melted butter and seasonings.
Spread in a small greased baking dish. Sprinkle with 1-2 tablespoons shredded cheese, then sprinkle with bacon.
Bake uncovered at 350*F for 10-15 minutes.
