Pear Mincemeat - Tasty
great if you have friends or family who are vegetarian 7 lb pears (about 21) 1 lemon 2 lbs golden or dark raisins 6 3/4 cups sugar 1 tbsp cloves 1 tbsp cinnamon 1 tbsp allspice 1 tsp ginger 1 cup vinegar Wash the pears and lemon under cold running water. Drain. Cut the pears in half lengthwise and core. Coarsely chop the pears. Cut the lemon into quartersnand remove seeds. Finely cjhop the lemon, including the peel using a food processor. Combine all the ingredientsin a large pan. Bring the mixture to a boil over a medium heat, stirring to prevent sticking. Reduce heat and simmer for 30 minutes. Ladle hot mincemeat into hot jars. Process pint jars for 25 minutes.
