Winter Country Soup-cooktocook Prep Time:20 minutes Cook Time:40 minutes Makes: About 10 servings
Ingredients: 1 Tbsp. butter 1 pkg. smoked sausage, cut into 1/4-inch slices (you could do turkey sausage) 1 cup onions (I used onions; you could do shallots) 1 large red bell pepper, cut into 1/2-inch pieces 8 cups chopped fresh kale (I used 6 cups of kale; you could do turnip greens) 1 15.25 oz. can whole-kernel corn, drained (I used 1 cup of frozen corn and added 1 cup of fresh carrots, chopped) 1 15.5 oz. can of northern beans, drained 8 cups of vegetable broth or stock (I used homemade) 1/2 tsp. cayenne pepper 3/4 cup uncooked orzo pasta (I cooked 1/2 cup separately and added to soup when it was finished cooking) *Not listed in the ingredients, I added 1/2 tsp. of salt*
Directions: 1--Melt butter in a 5 or 6-quart pan or stockpot over medium-high heat. Cook sausage, onions and red pepper, stirring occasionally until sausage is slightly browned, about 3 to 4 minutes. 2--Add kale and cook, stirring gently until wilted, about 3 minutes, Stir in corn, beans, vegetable broth and cayenne pepper. Bring to a boil. 3--Stir in orzo pasta. Return soup to a boil, reduce heat to medium-low, cover and cook 30 minutes.
