Southwestern Egg Casserole-Tamaralynn

10 eggs
1 c. half and half
Salt/pepper
2 x 3.5 oz packages corn tortilla strips
1 lb. sausage, browned, drained, crumbled
1 c. Mexican cheese blend
1 T. fresh snipped chives
12 oz cottage cheese
2 c. salsa
Coat a 9 x 13 inch casserole with Pam. The night before serving, whisk eggs in a bowl until well mixed. Add half & half, cottage cheese, salt and pepper. Blend well. Place tortilla strips in bottom of pan. Scatter cooked sausage over. Pour the egg mixture over. Top with cheese. Sprinkle chives over. Cover with foil; chill overnight. The next morning, preheat oven to 325*. Bake, covered, for 45 minutes. Uncover, bake 20 minutes. Let stand 5 min. Serve with salsa.
