Beef Pot Roast-cooktocook Servings:8 Prep:10 minutes Cooking Time:8 to 9 hours (Low) or 3 to 4 hours (High) I made this a few weeks ago--so easy and so good! The meat was super tender, and I could have drunk the gravy out of a cup it was so flavorful!---Lori Ingredients: 1 bag (12ounces) frozen onions 1 bag (8 ounces) frozen carrot slices 1 beef chuck roast, 4-pound, rinsed and patted dry salt and pepper 2 Tbs. oil 1 can (10 3/4 ounces) condensed cream of celery soup 1 packet (1 ounce) onion soup mix 1 cup low-sodium beef broth 1/4 cup steak sauce Directions: 1--Add frozen onions and carrots to the bottom of a 4-5 quart slow cooker. 2--Season roast with salt and pepper. Heat oil in a large skillet over medium-high heat. Brown chuck roast on all sides, then place into slow cooker on top of onions and carrots. 3--In medium bowl, stir together cream of celery soup, onion soup mix, beef broth, and steak sauce. Pour over the roast. 4--Cover slow cooker and cook on low-setting for 8-9 hours or on high-heat setting for 3-4 hours. Notes: I made this on the stove top-Dutch oven. Cooking time was about 3 1/2 hours. I used fresh onions and carrots instead of frozen, same amount. Celery soup was Campbell's Healthy Request, low sodium; used lowest sodium onion soup mix I could find; used unsalted beef broth. I used A-1 for steak sauce.
