Cherry Muffins-Tamaralyn from Tasty Holiday Gifts 10 oz jar maraschino cherries 1 ¾ c. flour ½ c. sugar 2 ½ t. baking powder 1 t. dried grated lemon peel ¾ t. salt 1 egg ½ c. milk 1/3 c. oil 1 t. almond extract ¼ c. chopped almonds Preheat oven to 400*. Reserve ¼ c. cherry juice, drain cherries and coarsely chop. In a large bowl, combine flour, sugar, baking powder, peel, and salt. Make a well in center. In a small bowl, whisk reserved juice, egg, milk, oil, and extract. Pour into well. Stir just until moistened. Stir in cherries and almonds. Spoon batter into paper lined muffin tin, fill ¾ full. Bake 18-20 minutes or until edges are light brown. Transfer to wire rack and cool completely. Store in airtight container. Makes 12 * I did not have any almonds so omitted them. I did have walnuts, and thought about using them instead, but, since I am taking them to a function, decided to leave nuts out altogether. Also, these seemed a little salty to me, so I reduced the salt in the 2nd batch to 1/2 tsp. Next time I may only do 1/4 tsp.
