Mother’s Corn Oatmeal Muffins-Tamaralyn
from Woman’s Day 1 c. flour 1 t. baking powder ¾ t. salt ½ t. baking soda ½ c. each yellow cornmeal and old fashioned oats 1 c. buttermilk 1 egg 1/3 c. packed light brown sugar ½ c. butter, melted Mix well flour, baking powder, salt and baking soda. Set aside. In a medium bowl, stir together cornmeal, oats and buttermilk. Add egg, sugar, and butter. Beat with a wooden spoon until well blended. Add flour mixture; stir until just blended. Spoon into 12 greased 2 ½ inch muffin tins. Bake in a preheated 400* oven for 23 minutes, or until rich golden brown.
