Porcini Roast Beef-tamaralynn
3 lb eye of round roast, trimmed 1 oz package dried porcini mushrooms 1 t. dried green peppercorns 1 T. fresh rosemary leaves 3 garlic cloves, peeled 2 t. extra virgin olive oil 3/4 t. salt Remove beef from refrigerator and let stand at room temperature 1 hour. Place an oven rack in the lower third of the oven. Preheat oven to 500*. Place a rack in roasting pan. Pulse mushrooms, peppercorns, rosemary and garlic in a food processor until ground. Rub beef with the oil, sprinkle with salt. Press mushroom mixture on beef. Place on rack in pan. Insert an ovenproof dial thermometer into center of beef. Place in oven. Reduce temperature to 350*. Roast until thermometer registers 130*, 1 hour. Transfer beef to cutting board. Tent with foil and let stand 20 minutes. The temperature will increase to 140-145*. This is medium rare. Carve into 24 slices.
