Stew Chez Nous-cooktocook Serves 6
Ingredients: 3 pound chuck roast 5 Tbsp. butter, melted 4 Tbsp. flour 2 10 3/4 cans cosomme', divided 12 ounces red wine 1 cinnamon stick 6 whole cloves 1 Tbsp. whole black peppercorns 1 Tbsp. basil2 bay leaves 1 tsp. thyme6 new potatoes peeled and halved 3-5 carrots, peeled and cut into1-inch pieces 1 bunch celery, cut into 1-inch pieces (including leaves) 3 Tbsp. arrowroot
Directions: 1--In a large skillet, brown meat in butter over high heat, approx. 12-15 minutes per side. Transfer meat to a heavy casserole with cover. 2--Blend flour into butter in skillet. Slowly add 1 can consomme', wine, cinnamon stick, clovers, peppercorns and basil. Stir well and add meat in casserole. 3--Cover and bake at 300* for 1 hour. Uncover and add 1 can consomme', potatoes, carrots and celery. Cover and bake an additional hour. 4--Mix together arrowroot and 6 TBsp. of hot liquid from casserole. Add arrowroot mixture to casserole and blend well. 5--Bake 30 more minutes. Skim off fat before serving.
