Rhubarb Sticky Muffins-Marlene
1 c finely chopped rhubarb ¼ c COLD butter and 1/3 softened butter ½ c brown sugar 1/3 c white sugar 1 egg 1½ c flour 2 tsp. baking powder ½ tsp salt ½ tsp nutmeg ( I omit since I'm not fond of nutmeg) ½ c milk Cut up rhubarb. With a pastry blender, mix the ½ cold butter and br. sugar. Add rhubarb and mix well. Spoon mixture into bottom of 12 greased muffin cups. Cream the remaining 1/3 c butter, sugar, and egg. Sift the flour with baking powder, salt, and nutmeg; add to creamed mixture alternately with milk mixing just enough to blend. Spoon on top of rhubarb mixture. Bake 350º 20 minutes. Turn pan upside down on a cake pan and cool about 5 minutes before removing muffins. Note: I like a bit more of the rhubarb mixute so I usually make 1½ that part of the recipe.
