2 medium onions, chopped 1/4 c. butter 2 lbs. ground beef dash each of: cinnamon, cloves, allspice 2 t. salt-DIVIDED 1/2 t. pepper 1/2 c. water 2 T. tomato paste 1 lb elbow macaroni 3 eggs, slightly beaten Sauce: 6 T. butter 3/4 c. flour 1 qt. milk 1 t. salt 3 eggs, slightly beaten 3/4 c. Parmesan cheese grated In a skillet over medium heat, saute onion in butter until golden. Add beef; cook until browned. Add spices, 1 1/2 t. salt, and pepper. Stir in water and tomato paste. Simmer uncovered 5 minutes. Set aside. Cook macaroni according to package directions. Drain. Mix with 3 beaten eggs and 1/2 t. salt. Set aside. Sauce: Melt 6 T. butter in a saucepan, over medium heat. Stir in flour. Cook and stir until well blended and bubbly. Gradually stir in milk and salt. Cook and stir until thick and bubbly. Remove from heat. Very gradually pour the sauce into remaining 3 beaten eggs. Blend well. Spoon half of macaroni into a buttered 9 x 13 baking pan. Sprinkle with 1/4 c. Parmesan. Place all of meat mixture on top evenly. Place remaining macaroni over meat mixture. Sprinkle with 1/4 c. cheese. Pour all of sauce over. Sprinkle with remaining 1/4 cheese. Bake uncovered 45-60 minutes @ 350*. May assemble and chill overnight.
