Luscious Tropical Dream Cake Scaled Down-wilderness
2 serving Desserts, Cake and frosting
Prep Time : 20 mins Cook Time : 48 mins Difficulty : Easy Servings : 6 servings Source : Myrecipes.com This recipe makes 3 4" round cakes. Ingredients
1/3 can (20 oz.) Crushed Pineapple in Juice, drained 1/3 box (2-layer size) yellow cake mix (148 grs) 1/3 pkg. of as (3.4 oz.) JELL-O Lemon Flavor Instant Pudding (32 grs) 1/2 cups cold milk 2/3 cup thawed COOL WHIP Whipped Topping 2T 2tsp ANGEL FLAKE Coconut, toasted 2T 2tsp chopped Pecans Directions
HEAT oven to 350°F.
DRAIN pineapple, reserving 1 cup juice. Divide the juice in 3 1/2C containers. Divide drained pineapple into 3 3 7/8 containers. Freeze 2 of each for other recipes.
CAKE 148 grs of cake mix 1/3 C pineapple juice 1 egg 3 1/2 T oil Beat all together on low for 30 sec. the on medium for 2 minutes. Pour into 3 4" round baking pans. 3 3/8 oz per pan Bake 15-18 minutes until a toothpick comes out clean. Cool Completely.
Pudding Beat milk and pudding for 2 minutes then stir in 3 7/8 oz. of drained pineapple. Divide evenly (approx. 3T) and spread over each cake, cover with COOL WHIP. Top with coconut and nuts. Keep refrigerated.
