Are you pancake impaired? Or just don't want the mess? Try this foolproof method for great pancakes. Super easy, just mix and bake. No skill needed.
HALF RECIPE: Equivalent of 2 pancakes or 1 serving
See pan size directions in Tips below.
DRY
1/2 cup flour
1 1/2 tablespoons sugar
1 teaspoons baking powder
1/4 teaspoon coarse salt
WET
3/8 cup milk
1/2 large egg (1 1/2 tbsp. beaten egg, although his comments on adjusting say to round up the egg, so a whole egg may work just fine)
1 tablespoons butter melted
OTHER
1/2 tablespoon butter for pan
3/8 cup blueberries
1 teaspoon sugar
Powdered sugar
Syrup
FULL RECIPE: Equivalent of 4 pancakes or 2 servings
See pan size directions in Tips below.
DRY
1 cup flour
3 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon coarse salt
WET
3/4 cup milk
1 large egg
2 tablespoons butter melted
OTHER
1 tablespoon butter for pan
3/4 cup blueberries
2 teaspoon sugar
Powdered sugar
Syrup
Preheat oven to 375 with a rack about 2/3 of thirds of the way up the oven. Place an oven-safe pan into heat also. I used a 10 inch cast iron pan for the full recipe. A pie pan or fry pan would work also.
Mix wet ingredients. Whisk.
Mix dry ingredients. Whisk. Mix wet into dry. Whisk until just combined. Do not overdo it.
When the oven is hot, remove the pan and melt butter, being sure to get sides.
Pour batter into the heated buttered pan. Sprinkle blueberries into the batter then sprinkle with sugar. Berries may be fresh or frozen (do not thaw).
Bake until browning nicely. 25 minutes for me. A toothpick should come out clean if you want to double check. You may want to turn on the broiler for 1-2 minutes to get more browning. If you have adjusted the size of the pan or the size of the recipe, check often.
Remove from oven, allow to cool for a few minutes then sprinkle with powdered sugar (optional) to serve with syrup.
PRO TIP
I'm using 1/4 of the recipe as the serving size. That would be about a standard small size pancake size. We commonly eat double that.
