Eggs Benedict for One-Birdy From the One Dish Kitchen Community on Facebook

Toast an English muffin per preference. Top each piece with two pieces of cooked bacon. (Hormel makes a decent precooked one that only takes a few seconds in the microwave to crisp up.) Top with two poached eggs--one per toast. Top with Hollandaise sauce (recipe for one below.) Salt and pepper to taste.
Hollandaise Sauce Recipe for One:
In a microwaveable cup/small bowl: Add 2 Tbsp. butter. Melt in the microwave. Add one egg yolk (save the white for another use). Add 1/4 tsp white wine vinegar. Whisk well. Microwave for 10 seconds. Whisk really well until smooth.
