Chocolate Zucchini Cake
Ingredients 2 cups all-purpose flour 2 cups white sugar 3/4 cup unsweetened cocoa powder 2 teaspoons baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon ground cinnamon 4 eggs 1 1/2 cups vegetable oil 3 cups grated zucchini 3/4 cup chopped walnuts Directions Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan. In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini until they are evenly distributed. Pour into the prepared pan. Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.

Just testing if coping & psting ould keep the formating. Looks like it did. Will be able to find the recipe later this weekend. My gdaughter Kelsey loves this cake.

You can elliminate all that oil by subsituting yogurt or sour cream. I would use 1/4c oil and the rest yogurt or sour cream. Much healthier and will actually make it lighter and fluffier. I prefer to use sour cream since I think it gives it a better depth of flavor, but plain or vanilla yogurt is good too. I have a cocoa sour cream zucchini cake recipe, but its at home and I'm not! lol I convince myslef if I use the sour cream then I can put butter cream frosting on top with less guilt!!!

Thanks for the suggestions, Melissa. The recipe I posted was more of a test & the first I came upon. I like your idea of the sour cream recipe. Have always enjoyed using sour cream in baking. If I don't find one with it, would you consider posting it when you get home, please?

I think I might have to go and buy zucchini. This sounds good as it stands but I love Melissa's idea of cutting down the oil and using sour cream :) .
