Last night a made a Breakfast Pizza for dinner for DH and myself. Quick meal and good! I have no so-called recipe, but I will try to write one here using what I had and what I did. Lori Breakfast Pizza-cooktocook
Serves:6 Ingredients: 6 eggs 1/4 tsp. salt 1/8 tsp. black pepper 3 Tbsp. milk Cooking oil spray 1 (1lb.)store-bought prepared pizza shell, thawed if frozen Options: This would depend on what you and your family would prefer. I used some leftover drained can mushrooms, onions, red, yellow, and green peppers, Italian sausage that I had browned weeks ago and pulled from the freezer, and mozzarella cheese. Other options could be ham, breakfast sausage, or no meat at all; fresh mushrooms, plum tomatoes; any cheese that melts well such as Cheddar. It is a great way to use up bits and pieces that you might have hiding in your refrigerator and/or freezer. Directions: 1--Preheat oven to 450 degrees F. 2--In a large bowl beat:eggs, salt, pepper, and milk. 3--In a large skillet sprayed with cooking oil spray (or you could use 1Tbsp. butter) over medium-low heat. Add egg mixture and scramble until firm, but not browned. 4--Place pizza shell on pizza pan or large cookie sheet. Spread scrambled eggs over shell. 5--Spread your options evenly on top of the scrambled eggs. 6--Bake 10-12 minutes until cheese is melted and crust is crisp and golden in color.
