Canadian War Cake - Small Batch-Birdy
Needs no eggs or milk. Depression Era recipe. This is a moist spice cake that lasts a long time stored on the counter. We put butternut icing on this.
1/2 cup sugar 1/2 cup water 3 Tbsp., scant, oil 1/4 cup raisins Pinch of salt ADD: 1/2 tsp. baking soda in scant 3 Tbsp. of prepared coffee 1 cup flour 1/8 tsp. nutmeg 1/2 tsp. cinnamon 1/4 tsp. cloves 1/4 tsp. baking powder STIR IN 1/4 cup chopped nuts.
Combine sugar, water, oil, raisins, and salt. Boil 5 minutes and cool. Add to a bowl.
Add baking soda and coffee to the bowl.
Whisk flour, spices, and baking powder together in another bowl before adding to the moist ingredients. Stir until combined, stirring in chopped nuts at the end.
Pour into a greased and floured 9"x5" loaf pan. Bake at 350 degrees.
This recipe has been cut down. Original recipe (X4) suggested 30-35 minutes. You should start testing at 20-25 minutes
