Cake Pan Spice Cake-Birdy from King Arthur Flour 200th Anniversary Cookbook Servings: 9 1 1/2 cups all-purpose flour 1/2 tsp salt 1 tsp baking soda 1 tsp cinnamon 1/2 tsp cloves 1/2 tsp nutmeg (or your choice of other spices) 1 tsp vanilla 1/4 cups and 2 tsp. veg. oil 1 cup brown sugar, packed (mix with wet ingredients) 1 cup buttermilk or tomato juice or 1/4 c. applesauce with 1/4 c. water 1 cup grated carrot, raisins, chopped apple, nuts, or whatever strikes your fancy Blend dry ingredients in a 8”x8" or 9"x9" pan. Make two holes--put vanilla in first, oil in second. Sprinkle with add-ins, if desired. Mix brown sugar, liquid of choice. Pour liquid over and mix thoroughly. Bake at 350 degrees for 15-25 min., checking for done. Nutrition (per serving): 188 calories, <1g total fat, <1g saturated fat, 313.7mg sodium, 42.8g carbohydrates, 41.7g net carbohydrates, 1.1g fiber, 25.8g sugar, 3.2g protein.
NOTE: The baking soda reacts with the acid in the buttermilk, tomato juice, or applesauce to create the leavening. Bake immediately after mixing since it begins working as soon as the liquid ingredients are combined. This is a moist cake that doesn't need frosting but you can always frost it if you want.
