Mexican Citrus-Marinated Chicken-cooktocook Serves: 6 Ingredients: 1/4 cup orange juice 2 T. olive oil 2 t. chili powder 1/4 t. salt 1/2 small onion, chopped small 1/4 cup lime juice 2 T. fresh, chopped cilantro 1 t. ground cumin 1/4 t. hot sauce 3 pounds skinless, boneless chicken breast Directions: 1--Combine the orange juice, olive oil, chili powder, salt, onion, lime juice, cilantro, cumin, and hot sauce in a large bowl and mix well (I used a Ziploc bag). Add the chicken, cover and refrigerate for at least 6 hours. 2--Grill the chicken, brushing with the marinade and turning occasionally, until cooked through. (I did not use the marinade the chicken sat in all day. I made a second batch up at the same time as the first and set it aside for when I grilled). 3--Serve with flour tortillas and offer sauteed onions, peppers, cheese, salsa, and sour cream. Or serve sliced over a salad with your favorite dressing.
