Hamburger Rice casserole-plantdoctor
1 lb hamburger 1 14oz can diced tomatoes 1 box Beef rice-a-roni 2 carrots peeled and sliced 2 Tbsp butter 2 ribs celery, diced 1 small onion, diced 1 green pepper diced (optional) 2 cups water
In a 3 quart pan brown the beef and onions. Drain and set aside. Melt butter in the pan and add rice-a-roni. Stir until vermicelli is lightly browned. Add the season packet, 2 cups of water, carrots, celery, tomatoes and pepper and then bring it to a boil. Reduce heat, cover the pan and cook for 15 minutes. Stir in the hamburger and onions. Ready to eat when heated through and rice is absorbed.
Not in the recipe, but I sometimes sprinkle 4 oz cheddar cheese over the top and eat when it is melted. Our kids and Larry loved anything with cheese melted on top. I don't do that for just myself. Charlene
