Piña Colada Cake Mix Cookies-Birdy
Ingredients:
1 box pineapple cake mix 1 cup dried pineapple chunks – I prefer to chop mine for smaller pieces 1 cup unsweetened shredded coconut 1.5 cups white chocolate chips (about half a bag) 3 eggs 1 stick melted butter
Heat oven to 350 and prepare a cookie sheet with parchment paper.
In a large bowl, melt one stick of butter. Add cake mix, pineapple chunks, and coconut. Stir to mix. Add white chocolate chips. The dough is very thick and sticky. It may be best to use your (clean) hands to fully mix all the ingredients together.
At this point you could spoon the dough onto the cookie sheet and bake for 8-10 minutes.
For a more attractive cookie, allow dough to chill in the refrigerator for an hour. Roll into ping-pong size balls and then bake for 8-10 minutes.
