French Bread-wilderness
3/4 c. milk 1/2c water 3 tbsp butter 1 tbs and 1 tsp sugar 1 tsp salt 3 1/4 c flour 2 tsp bread machine yeast Turn on dough cycle This makes 2 loaves and I have special FB pans. You could make it in loaf pans though I suppose, but then it wouldn't be french bread. When cycle is over let it rest for 15 minutes. Then divide into two and shape into long loaves and put in well oiled pans. Let it rise double then slash in about 5 places. Brush with egg wash. Bake 25 minutes at 375.
This is the original recipe. However, I don't make it in a bread machine. I make it in my mixer but can also be made by hand. Since I don't use the bread machine bloom the yeast in warm water with sugar added. Heat the milk and butter to scald then cool to warm. It is a soft rather sticky dough. Don't add too much flour but knead it well.
This how I altered it the last and make individual loaves.
Individual loaves. Divided dough into 8 3 oz. pieces, and roll into logs about 7" long. Place on a well greased sheet pan about 1" apart. Allow to rise until double, cut slashes, brush with egg wash and bake 20 minutes at 375°. Wrap in towel to cool.
