Bundt Pan Roast Chicken by Delish-marjo 3 cloves of garlic
2 carrots chopped
1 onion quartered 1/2#yukon gold spuds quartered
Extra virgin oil kosher salt,
black pepper,
1 bunch of thyme 1 lg. bunch fresh rosemary,
1 lemon 1 3-4# chicken 425# oven and cover hole in bundt pan w/foil. Combine garlic, carrots, onion, and spuds. Toss w/oil and season w/ s/p. Scatter sprigs thyme, rosemary on top of veggies. Put in bundt pan. Season chicken then stuff w/lemon halves and thyme and rosemary. Rub oil all over skin of chicken season w/salt and pepper. Place chicken in middle of pan breast side up. Bake until the chicken is cooked through, 1 hr to 1 hr and 10 minutes. Let rest for 15 min. before slicing. Serve w/ roasted vegetables and extra pan juices.
