Brown Sugar Cookies-mnwildflowers
1 Cup butter, melted and cooled to room temp (I used 3/4 c and it was perfect, microwaved until just starting to melt, stirred it to finish melting what hadn't, and let that sit about 5 mins, it was creamy and smooth but not liquidy if that makes sense). 1 egg plus 1 egg yolk 1&3/4 cup brown sugar (I used light but could use either) 1&1/2 tsp vanilla 2&3/4 cup flour (I used about 2&1/2 since I used less butter) 1 Tbs corn starch 3/4 tsp baking soda 1/2 tsp baking powder 1/4 tsp salt I also added 2 Tbs molasses and 1&1/2 tsp cinnamon Cream together cooled butter, egg and yolk, vanilla, and brown sugar and molasses until light and fluffy. In separate bowl combine dry ingredients. Add dry ingredients and mix until just combined. Chill dough for 2 hours. It says this step must be followed, so I did. Preheat oven to 350. Remove dough from fridge and roll in to balls. Roll balls in a mix of cinnamon sugar. Place on lined baking sheet. Bake 8 minutes. Pull out pan and gently tap each cookie, this will help give them a crackle look. Return to oven and bake an additional 4 minutes. Don't over bake. Allow to cool on pan for 5 minutes before moving to cooling rack.
