Cannoli-flowerpower
1 3/4 cups all purpose flour
1/2 tsp salt
2 tbsp. sugar
1 egg slightly beaten
2 tbsp. firm butter cut into small pieces
about 1/4 cup sauterne or white vinegar
1 egg white slightly beaten
Sift flour ,sugar & salt together in a bowl. Make a well in the middle of flour, place the egg and butter in well . With a fork mix dough from the middle out. Gradually add vinegar a little bit at a time. Dough will be sticky when done. Roll by hand into a ball cover and let stand.
Get your oil heated up for deep frying. Use some vegetable oil to grease tubes
Roll your dough about 1/4" thick. We used large glasses to cut the dough into circles or you can use small glasses for smaller cannoli's.
Then grease the tubes you want to put the dough around. Roll dough around tube and seal with egg whites. Fry until a nice light golden brown. The tubes are metal so have tongs to take out of grease. When they cool a bit gently twist of the tube and cool completely.Store when totally cool store in air tight container or fill and enjoy.
Filling:
1 small container ricotta cheese
1 1/2 cup confectionary sugar more or less depends how much sweetness you like. Use a hand mixer for this part
Hershey candy bar cut into small pieces
Maraschino cherries cut in 1/2 . Mix both of these by hand
Vanilla pudding filling
1 large package vanilla pudding
Hershey candy bar cut into small pieces
Cook pudding as directed on box. Chill overnight. Add chocolate and mix
Stuff the shells you can either use a teaspoon or a pastry bag if you have one. Sprinkle with confectionary sugar and serve.
